1/2 cup of butter 1 onion, minced 1 garlic, minced 2/3 cup of slivered almonds 1/2 cup of raisins 1/2 cup of sherry 1/4 cup of chopped chutney 2 teaspoons of turmeric 3/4 teaspoon of nutmeg 2 cups of brown rice 4 cups of chicken broth
Soak raisins in sherry to plump. Melt butter in skillet over medium heat. Sauté onion and garlic until golden. Mix in almonds, raisins and sherry, chutney, turmeric and nutmeg. Cook rice in broth. Add ingredients from skillet. Pack in 1 1/2 quart mold and keep warm until served. Unmold and garnish with chopped onion, chopped egg yolk, or mint leaves. |
