| | Scandinavian Ham Salad
1 fresh pineapple 2 cups of cubed, cooked ham 6 cherry tomatoes, halved 1 cup of sliced celery 1/4 cup of sliced green onion 1.2 cup of sour cream 1/2 teaspoon of dill weed 1/2 teaspoon of hot mustard 1/4 teaspoon of salt 1/4 teaspoon of lemon juice 1/8 teaspoon of garlic salt Black pepper
Cut the pineapple in half lengthwise through crown. Remove pulp, leaving shells intact. Core and dice pulp. In a large bowl, combine pineapple, ham, tomatoes, celery, and onion. In a small bow, combine remaining ingredients; mix well. Spoon dressing over pineapple mixture, tossing gently to mix. Spoon salad into pineapple shells. Serves 6 |
