1 cup of tomato sauce 1/2 cup of eggplant, diced 1/2 celery, diced 1/2 cup of peppers, diced 1/2 cup of onions, diced 1 can of mushrooms, drained salt and pepper to taste garlic powder to taste a dash of hot pepper 1 ounce of Mozzarella cheese 8 ounces of clean, steamed shrimp 8 ounces of crabmeat 8 ounces of longostino or lobster meat 2 slices of American cheese
In a casserole, place 1/2 cup of tomato sauce. Mix together with eggplant, celery, peppers, onions, mushrooms and seasonings and place in casserole. Pour remaining tomato sauce on top of mixture, sprinkle with Mozzarella cheese; cover, and bake for 1 hour, stirring once or twice during baking. Remove from oven and stir in shrimp, crab, and longostino, arranging some on top of casserole. Add American cheese and bake for another 5 or 10 minutes. * Baking temp was not included, 350ºF. is a general setting, please check during cooking process. |
