Shrimp for Two

6 chopped, fresh mushrooms
1 clove crushed garlic
1 teaspoon of chopped parsley
4 chopped green onions
1/2 stick butter or margarine
1/2 pound of medium, raw shrimp, shelled
juice of 1/4 lemon
1 ounce of dry white wine
1/4 teaspoon of salt
1/4 teaspoon of pepper



Put the first 5 ingredients in a shallow oven proof baking dish. Place in 400ºF. oven and cook until vegetables are soft and golden but not brown. Remove. Add shrimp, salt, pepper and wine. Stir to combine. Sprinkle lemon juice over top. Return to oven. Bake for 10 minutes, turning shrimp over after 5 minutes. Serve with rice. Be careful not to overcook! Enjoy
