| | Sugar Free Chicken Salad
1 pound ( about 3 cups) of cut up, cooked chicken 3/4 cup of avocado, diced 1/3 cup celery, diced 1/4 cup of slivered almonds, toasted 1 1/2 teaspoons of minced onion 3/4 cup of cooked dressing
In a large bowl, combine the chicken, avocado, celery, almonds and onion. Add cooked dressing. Toss lightly. Makes about 6 servings of 3/4 cup per serving.
Cooked Dressing
1 packet of natural butter flavor granules 1/2 teaspoon of dry mustard 1/8 teaspoon of salt 1 cup of buttermilk, divided 1 tablespoon of cornstarch 1/2 teaspoon of distilled white vinegar 1/4 teaspoon of prepared mustard 1/4 teaspoon of celery seed 1/8 teaspoon of white pepper
In top of double broiler, combine butter granules, dry mustard, celery seed, salt and pepper. Add 1/2 cup buttermilk and mix thoroughly. Place over simmering water. Add cornstarch to remaining 1/2 cup buttermilk and blend to a smooth paste. Add to double boiler and stir to blend. Add vinegar and prepared mustard. Heat until mixture thickens, 10 - 15 minutes, stirring constantly. Remove from heat. Cool. refrigerate for 30 minutes before using. Use on meat or fish salads. Makes 3/4 cup |
