about 6 tablespoons of butter 3 eggs 1/2 teaspoon of salt 3 tablespoons of finely chopped shallots or scallions or onions 1 1/2 cup of heavy cream or half and half 1/2 teaspoon of ground pepper, freshly ground 1 cup of grated Swiss cheese 1/4 pound of smoked ham, cut in 1/2 inch cubes
Generously butter sides and bottoms of 4 disposable aluminum foil tart pans, 5 inches in diameter or one 8 or 9 inch quiche or pie pan. Sauté shallots for 2 minutes in 1 tablespoon of butter. Reserve. Beat eggs, cream, salt, and pepper till well mixed. Stir in 2/3 of the grated cheese, the sautéed shallots, then cubes of ham. Pour equal amounts into the 4 tart pans or all into the quiche dish, making certain ham is well distributed. Sprinkle remaining cheese on top and dot with butter. Bake at 375ºF. for 20 - 30 minutes until well browned. Serve with fresh garden salad.
