1 quart of cucumbers, sliced thin 1 onion, sliced thin 1 large cauliflower, cut into small flowerets 1/4 cup of salt 3 pints of water 1 pint of cider vinegar 1 cup of honey 1 tablespoon of mustard seeds 2 green peppers, diced 1 cup of chopped celery 1 tablespoon of celery seeds
Cover cucumbers, onion, cauliflower, and salt with water. Let stand a couple of hours. Drain. Heat vinegar, honey, and mustard seeds to boiling. Add peppers, celery and celery seeds. Simmer for 30 seconds. Pour into hot, sterilized jars. Seal. Makes 8 - 10 pints |
