Cinnamon Cookies

2 sticks of margarine
1 cup of sugar
1 egg yolk
2 cups of flour
2 teaspoons of cinnamon
1/4 teaspoon of salt

Cream the margarine, sugar and egg yolks. Add flour sifted with cinnamon and salt. Mix well. Divide dough into 2 balls. Roll each onto ungreased cookie sheet. Score in squares or triangles so cookies can be broken apart when they are done. Beat egg whites until frothy and paint flattened dough with pastry brush. Mix some cinnamon and sugar to sprinkle on top. Could add chopped nuts. Bake for 20 minutes at 350ºF.   Cool. Cut immediately
