Anzac Cookies

1 cup of flour
1 cup of rolled oats
3/4 cup of finely shredded coconut
1 cup of sugar
1/2 cup of butter
1 tablespoon of maple syrup
1 1/2 teaspoons of baking soda
2 tablespoons of boiling water  

Preheat oven to 350ºF. Sift the flour into mixing bowl; add the oats, coconut, and sugar. Place the butter and maple syrup in a saucepan, stir over low heat until the butter is melted. In a small bowl, combine the baking soda and boiling water, add to the melted butter mixture. Stir into flour mixture and mix well. Drop dough by heaping teaspoons about 2 inches apart onto greased cookie sheet. Bake for 20 minutes. Place cookies on cooling racks, let cool Makes 3 dozen
