Chocolate Cherry Thumbprints

Chocolate Cherry Thumbprints
 
 3/4 cup of sugar
 2/3 cup of margarine (1 stick + 3 tablespoons)
 2 large Eggs
 1 teaspoon of vanilla
 12 ounce package of chocolate chips(2 c.), divided
 2 cups of oats (quick or old fashioned)
 1 1/2 cups of all purpose flour
 1 teaspoon of baking powder
 1/4 teaspoon of salt, optional
 2 cups of maraschino cherries, two 10 ounce jars, drain patted dry 


Heat oven to 350ºF. Beat margarine, sugar, eggs and vanilla until smooth. Add 1 Cup of morsels, melted. Mix well. Stir in oats, flour, baking powder and salt, mix well. Cover dough and chill 1 hour. Shape dough into 1 inch balls. Place on ungreased cookie sheet, press deep centers with thumb. (I use lg wooden spoon handle). Place a maraschino cherry into hole. Bake 10 to 12 minutes, or until set. Remove to wire rack, cool completely. Drizzle cookies with remaining 1 cup of melted morsels. Note: To melt 1 cup of morsels, Microwave on High 1 to 2 minutes, stirring every 30 seconds.
