Delightful Nut Brittle

2 cups of granulated sugar
1 tablespoon of butter
1 teaspoon of vanilla extract
2 cups of shelled hazelnuts, coarsely chopped and lightly toasted
1 cup of shredded coconut, lightly toasted



Lightly butter a large cookie sheet. Set aside. Put the sugar in a large saucepan. Cook, stirring constantly over medium heat, until the sugar is melted, about 15 minutes. Stir in the butter, lower the heat and cook until the mixture is amber, about 3 to 5 minutes. Remove from the heat and immediately stir in the vanilla extract, hazelnuts, and coconut. Pour the mixture onto prepared cookie sheet and spread out using the back of a wooden spoon to a thickness of about 1/3 inch. When the brittle is completely cooled, loosen from the sheet and break into pieces. Store in an airtight container at room temperature for up to 1 month.
