| | Stirred Rice Pudding
2 eggs, beaten 1 cup of milk 1/4 cup of sugar 1/4 cup of raisins 1 cup of cooked rice 1 teaspoon of vanilla a dash of salt a dash of cinnamon
In a saucepan, combine eggs, milk, sugar, and raisins. Cook and stir over medium heat for 6 to 8 minutes or until mixture coats a metal spoon. Remove from heat; stir in rice, vanilla, salt and cinnamon. Spoon into dessert dishes. Chill until serving time. Makes 4 servings |
