Dutch Doughnuts

1 package of dry yeast
1/4 cup of warm water
2 eggs
1/2 cup of skim milk
1/4 cup of whole milk
1 teaspoon of vanilla extract
1/3 cup of granulated sugar replacement
3 cups of all purpose flour
1 tablespoon of baking powder
1 teaspoon of salt
1/2 teaspoon of ground cinnamon
1/4 teaspoon of ground nutmeg

Dissolve the yeast in warm water in a large bowl. add eggs, skim and whole milk, vanilla, and sugar replacement. Beat until light and fluffy. Add 2 cups of the flour and the baking powder, salt, cinnamon, and nutmeg, beat on low until well blended. Stir in the remaining flour. Transfer to floured surface. Roll dough to about 1/3 inch thickness. Cut with a floured doughnut cutter. Heat about 3 inches of vegetable oil to 375ºF. in a skillet or deep fat fryer. Slide the doughnuts into hot oil. Fry until golden brown, turning several times. Remove from oil and rain on paper towels. Makes 24 servings
