Tuna Pilaf

1 cup of uncooked long grain rice
1 teaspoon of reduced calorie margarine
2 green onions, chopped
2 1/2 cups of water
one 10 ounce package of frozen mixed Oriental vegetables, thawed
one 10 ounce can of tuna in water, drained and broken into chunks
1 tablespoon  of reduced sodium soy sauce

Combine the rice and margarine in a small Dutch oven,. Cook over medium heat for 2 minutes or until the rice is transparent. Add the green onions, and cook for 1 minute or until tender. Stir in water. Cover and bring to a boil. Reduce the heat to low, and cook for 20 minutes or until the water is absorbed. Add oriental vegetables. Continue to cook over low heat for 5 minutes or until the vegetables are tender. Fold in tuna and soy sauce. Serve hot.
