Veal Parmigiana

1 egg, beaten
1/2 teaspoon of salt
1/4 teaspoon of pepper
1/4 cup of soft breadcrumbs
1 tablespoon of grated Parmesan cheese
1 pound of thin veal cutlets, cut into 6 serving size pieces
vegetable cooking spray
one 8 ounce can of tomato sauce
two 1 ounce slices of part skim mozzarella cheese



Combine the egg, salt, and pepper, beat with a wire whisk until blended. Combine the breadcrumbs and Parmesan cheese, stirring well. Dip veal into egg mixture and dredge in breadcrumb mixture. Sauté veal in a large skillet coated with cooking spray until golden brown. Transfer veal to a shallow baking dish. Pour tomato sauce over veal, and top with cheese slices. Bake at 350ºF. for 15 to 20 minutes. Serve immediately. Makes 6 servings ecipe provided by http://www. Basic-Recipes.com
