| Strawberry Pineapple Salad one 0.3 ounce package of sugar free strawberry flavored gelatin 3/4 cup of boiling water one 10 ounce package of frozen unsweetened strawberries, partially thawed one 8 1/4 ounce can of crushed water packed pineapple undrained 1 medium banana, mashed vegetable cooking spray 1 cup of plain, unsweetened low fat yogurt Dissolve the gelatin in boiling water in a large mixing bowl, stirring well. Chill until the mixture is the consistency of unbeaten egg white. Fold the strawberries, pineapple, and banana into gelatin mixture. Pour half of mixture into a 13 x 9 x 2 inch baking dish coated with cooking spray, chill until firm. Store the remaining gelatin mixture at room temperature. Spread yogurt evenly over congealed layer. Pour the remaining gelatin mixture over yogurt. Chill until firm. Cut into squares to serve. Makes 10 servings
