Strawberry Spread

1 quart of fresh strawberries, washed, hulled and coarsely chopped
3/4 cup of cold water, divided
2 tablespoons of lemon juice
1/4 teaspoon of ground cinnamon
3 tablespoons of cornstarch
1 tablespoon + 1 teaspoon of powdered sugar substitute

Combine the strawberries, 1/2 cup of water lemon juice, and cinnamon in a small Dutch oven, stirring well, bring the mixture to a boil. Dissolve cornstarch in the remaining 1/4 cup of cold water, and stir into boiling mixture. Reduce the heat, and simmer for 2 - 3 minutes or until the mixture thickens, stirring occasionally. remove from heat and cool. Stir in sugar substitute. Makes 32 servings
