Baked Chicken 

Four 3 ounce skinned, boned chicken breast halves
vegetable cooking spray
one 12 ounce can of whole tomatoes, undrained and chopped
1/2 cup of chopped green pepper
1/2 cup of chopped onion
1/2 teaspoon of garlic powder
1/4 teaspoon of dried whole basil
1/4 teaspoon of dried whole oregano
1/4 teaspoon of pepper

 

Arrange the chicken breasts halves in a 10 x 6 x 2 inch baking dish coated with cooking spray. Combine the tomatoes and remaining ingredients, stirring until well combined, spoon over chicken in dish. Cover and bake at 400ºF.   for 1 hour or until the chicken is done. Makes 4 servings
