Parsley Rice 2 green onions, chopped 1/2 clove garlic, minced 3 tablespoons of reduced calorie margarine, melted 2 cups of hot cooked rice, cooked without sat or fat 2 cups of skim milk 2 cups (8 ounces) of shredded low fat process American cheese 1 cup of chopped fresh parsley 1 egg, beaten 1/2 teaspoon of salt vegetable cooking spray Sauté the onions and garlic in margarine until tender. Combine the sautéed mixture, rice and the next 5 ingredients, stirring well. Spoon the mixture into a 1 1/2 quart casserole dish coated with cooking spray, and bake at 350ºF. for 45 minutes. Makes 8 servings
