Almond Cookies  Basic-Recipes.com8/27/06

1/4 cup plus 2 tablespoons of reduced calorie margarine
1 teaspoon of powdered sugar substitute
1 egg yolk
1/2 teaspoon of almond extract
1/4 teaspoon of vanilla extract
1/4 teaspoon of lemon extract
1 cup of all purpose flour
1/2 teaspoon of baking powder
1/8 teaspoon of salt



Cream the margarine and sugar substitute in a medium bowl, beating at medium speed of an electric mixer until light and fluffy. Add the egg yolk and flavorings, beat well. Combine the flour, baking powder, and salt, add to creamed mixture, beating well. Shape the dough into 1 inch balls, place 2 inches apart on ungreased cookie sheets. Press each with a fork to flatten. Bake at 300ºF.  for 20 minutes or until the edges begin to brown. Remove the cookies to wire racks, and cool completely.  Makes 2 1/2 dozen cookies  by http://www.
