APRICOT SPREAD

1 cup of apricots (dried)
1 1/2 cup of water
1 tablespoon of cornstarch
1 tablespoon of  water
1/4 teaspoon of lemon juice
10 packets of Equal



Soak apricots in 1 1/2 cups of water for 5 minutes in a quart glass measure. Microwave on high (100%) for 3 to 5 minutes until soft. Blend or mix well. Dissolve cornstarch and Equal in 1 tablespoon of water, add lemon juice. Combine cornstarch and apricot mixtures. Stir microwave on high (100%) for 3 to 5 minutes. Stir thoroughly. Spread warm or cold on cakes and breads. Keep refrigerated. Yield: 1 3/4 cups. 1 teaspoon = 5 calories. Diabetic Exchange: free.
