1 1/2 cup of flour 1 teaspoon of baking powder 1/4 teaspoon of baking soda 1/4 teaspoon of salt 1/3 cup of diet margarine 1/3 cup of flaked coconut 1 egg 1/2 cup of unsweetened fruit juice 2 teaspoons of orange or lemon peel, grated Sugar Substitute Equal to 1/3 cup of sugar |

Preheat oven to 400ºF. Combine flour, baking powder, baking soda, and salt, cut in margarine until consistency of peas. Stir in coconut add remaining ingredients all at once. Stir with fork until dough holds together. Drop about 2 inches apart by teaspoons onto an ungreased cookie sheet. Bake until light golden brown (about 10 minutes). Yield: 3 dozen. |
