Diabetic Raisin Cookies
2/3 cup of water 1/4 cup of butter or margarine 1/2 cup of raisins 1/2 cup of dates 1 tablespoons of liquid sweetener
Boil for 3 minutes and let cool. Sift together: 1 cup of flour 1/2 teaspoon of soda 1/2 teaspoon of baking powder 1/4 teaspoon of salt
When boiled mixture is cool, add 1 beaten egg, 1 teaspoon vanilla and 1/2 cup chopped nuts. Mix well by hand. Add flour mixture and mix well. Drop by teaspoon on cookie sheet. Bake 10 to 12 minutes at 350ºF. Back to Diabetic Recipes |
