Party Planning Recipes for the month of June >

Flaming Rum Bananas

1/2 cup of light or dark rum, divided
1 cup of water
4 tablespoons of light molasses
1 1/2 cup of light brown sugar, packed
1/2 cup of lime juice
2 tablespoons of butter, or margarine
9 medium ripe bananas
1 1/2 quarts of vanilla ice cream



In a skillet, combine 1/4 cup rum, molasses, brown sugar, lime juice, and butter. Heat to boiling, stirring until sugar dissolves. Reduce heat and simmer uncovered (about 3 minutes, or until beginning to thicken). Slice bananas diagonally in 2-inch chunks; add to syrup. Spoon syrup over bananas. Cook over medium heat while stirring (about 5 minutes, or until bananas are just tender and glazed all over). Place a scoop of vanilla ice cream into each of 8 to 10 dessert dishes. Heat remaining 1/4 cup rum over candle warmer at table; ignite with match. Pour flaming rum over bananas. Ladle bananas and sauce over ice cream.
