| | Mexican Steaks
4 beef steaks 3 tablespoons of sunflower oil 1/2 red onion, grated 1 red chile, seeded and finely chopped 1 garlic clove, crushed 1 tablespoon of chopped fresh cilantro 1/2 teaspoon of dried oregano 1 teaspoon of ground cumin
Avocado Salsa
1 ripe avocado grated rind and juice of 1 lime 1 tablespoon of sunflower oil 1/2 red onion, finely chopped 1 red chile, seeded and finely chopped 1 tablespoon of chopped fresh cilantro salt and pepper
Make a few cuts in the edge of fat around each steak to prevent the meat from curling as it cooks. Place the meat in a shallow, nonmetallic dish. Combine the oil, onion, chile garlic , cilantro, oregano, and cumin in a small bowl. Pour the marinade over the steaks, turning the meat so that it is well coated. Let marinate for 1 - 2 hours.
To make the salsa, halve the avocado and remove the pit. Peel and dice the flesh into small cubes. Combine the avocado with the lime rind and juice, oil, onion, chile, cilantro, and salt and pepper to taste, and mix well. Cover and let chill in the refrigerator until required.
Grill the steaks on an oiled rack over hot coals for 6 - 12 minutes on each side, until cooked to your taste.
Serve the steaks accompanied by the avocado salsa. Serves 4 |
