| | Mixed Green Salad w/Walnut Dressing
1 head of romaine lettuce, washed and torn 2 bunches of watercress 3 heads of Boston, Oakleaf or Simpson lettuce 1 head Belgian endive 1 cup of coarsely chopped walnuts 1/2 cup of vegetable oil 1/2 cup of lemon juice 1 teaspoon of salt 1/4 teaspoon of coarse black pepper 1 tablespoon of grated Romano or Parmesan cheese
Wash and dry greens. Combine the greens in salad bowl. Sprinkle walnuts. Make dressing: In a bowl, blend oil, lemon juice, salt, pepper and Romano cheese. Pour dressing over greens at table, toss. Makes 6 to 8 servings
