Turkey & Ham Casino

1 cup of chopped onion
1 cup of chopped green pepper
1/4 cup of butter or margarine
1/2 cup of unsifted all purpose flour
2 cups of milk
1 3/4 cups of chicken broth
1/4 cup of dry sherry
one 4 ounce can of sliced mushrooms, drained
2 cups of coarsely chopped cooked turkey
2 cups of coarsely chopped canned ham
1/2 cup of diced pimientos
one 8 ounce can of water chestnuts, drained and sliced
1 teaspoon of salt
1/4 teaspoon of freshly ground black pepper
6 to 8 cups of hot cooked rice

In a 4 to 6 quart Dutch oven, sauté onion and green pepper in hot butter until tender. Add flour all at once and blend in smoothly. Add milk, broth, sherry. Cook, stirring constantly until mixture begins to  boil.
Add mushrooms, turkey, ham, pimientos, water chestnuts, salt and pepper. Heat until mixture comes to boiling point. Reduce heat and simmer 5 minutes. Pour Casino mixture into serving dish or chafing dish. Serve mixture over beds of rice. Makes 12 servings
