| Sister Cream Cheese
8 ounces of cream cheese 2 scallions, chopped 1 garlic clove, finely chopped 8 green olives w/pimento, chopped 6 walnut halves, chopped 1/4 teaspoon of black pepper
Soften cream in microwave for 20 seconds. Coarsely chop olives and walnuts. Mix all ingredients together. Serve on flat bread, endive leaf, or on squares of cut bell pepper. Stuff in celery, mushrooms, or hollowed-out cherry tomatoes. It also can be rolled up in a roasted bell pepper (pat dry) secured with a toothpick. For a light lunch, roll it up in a thin slice of roast beef, ham, turkey, or lettuce leaf. Serves 6-8. |
