6 crisp lettuce leaves or cups 2 cups of cottage cheese 1 medium cucumber, peeled and thinly sliced 1/4 pound of fresh mushrooms, sliced 1 medium zucchini zucchini, cut in strips 2 medium tomatoes, cut in 12 wedges Blushing Yogurt Dressing |

Arrange lettuce leaves on serving platter, leaving space in center. Divide cottage cheese and place a small mound in center of each lettuce leaf. Arrange cucumber, mushrooms, zucchini and tomatoes around cottage cheese. Place a small bowl of Blushing Yogurt Dressing in center.
