Grapefruit & Avocado Salad
2 avocados, peeled, pitted and sliced 2 tablespoons of lemon juice 1 medium head curly chicory, washed and torn 3 endives, washed and separated into leaves 2 medium grapefruit, peeled and sectioned 2 small tomatoes, cut in wedges 12 pitted black olives Vinaigrette dressing |

Sprinkle avocado slices with lemon juice. Arrange greens in salad bowl and top with avocado slices, grapefruit sections, tomato wedges and olives. Just before serving, toss gently with a little Vinaigrette Dressing. Makes 6 servings
