Marinated Squash Medley
3/4 cup of olive oil 1/3 cup of tarragon flavored wine 2 tablespoons of finely chopped shallots 1 clove garlic, minced 1/2 teaspoon of salt 1/4 teaspoon of pepper 1/4 teaspoon of dried thyme 3 medium size yellow squash, sliced 3 medium zucchini, sliced |

Combine the first 7 ingredients in a jar. Cover tightly and shake vigorously. Pour dressing over squash; toss gently. Cover and chill 4 hours. To serve toss again, and serve with a slotted spoon. Yield: 8 servings
