Quick Lemony Sautéed Liver
1/4 cup of corn oil 1/2 cup of sliced onion 1 1/12 pounds of beef liver, sliced 1/2 inch thick, cut into 2 x 1/2 inch strips 1/2 teaspoon of salt a few twists of freshly ground black pepper 2 tablespoons of lemon juice 1/4 cup of finely chopped parsley |

Heat oil in large skillet. Add onion and sauté until golden, about 5 to 8 minutes. Remove to paper towel, cover. Add liver to skillet and sauté quickly over medium high heat, stirring frequently until browned on both sides. Takes about 5 minutes. Season with salt and pepper. Sprinkle with lemon juice and parsley, toss. Arrange on serving platter, top with onions. Makes 6 servings
