Tuna Salad Nicoise
1 head of lettuce, washed and chilled two 6 1/2 or 7 ounce cans of tuna in water, drained 2 medium potatoes, peeled and sliced 1 tablespoon of bottled diet French or Italian dressing 1/2 pound of whole, cooked green beans 2 hard cooked eggs, quartered 2 tomatoes, quartered 8 ripe olives 1/2 can of (2 ounces) of rolled anchovies, drained 1 red onion, sliced or chopped 1 red onion, sliced or chopped Pimiento strips Bottled diet French or Italian dressing |

Line a large platter with lettuce leaves. Break tuna into large chunks and pile in center. Toss potatoes with 1 tablespoon of dressing. Arrange potatoes, green beans, eggs, tomatoes and olives around tuna. Decorate with anchovies, red onion and pimiento strips. Cover and refrigerate until serving time. Serve with bottled diet French or Italian dressing to which you have added 1/2 teaspoon of tarragon leaves and 1 teaspoon of drained capers for each 1/2 cup of dressing. Makes 4 servings
