Vanilla Poached Pears with Strawberries

2 cups of water
1 tablespoon of lemon juice
1 tablespoon of no calorie liquid sweetener
4 pears, hard ripe, peeled, cored and quartered
1 tablespoon of pure vanilla, extract
1 cup of sliced fresh strawberries

In a 3 quart saucepan, combine the water, lemon juice, and sweetener. Bring to boiling point. Add the pears, cover and simmer about 10 to 12 minutes or until pears are tender. Add the vanilla extract. Pour into bowl, cover with plastic wrap or foil, refrigerate. Just before serving, stir in strawberries. Makes 6 servings
