4 tablespoons of tarragon vinegar 1 tablespoon of finely chopped onion 1/2 teaspoon of thyme leaves, crushed 1/2 teaspoon of savory leaves, crushed 1/2 teaspoon of ground mustard 1 teaspoon of salt freshly ground black pepper 1/2 cup plus 2 tablespoons of olive oil |

Combine vinegar, onion, thyme, savory, dry mustard, salt, and pepper in a small bowl. Using a wire whisk, add oil slowly, beating constantly until dressing is smooth and thick. Makes 3/4 cup
