Chicken & Mushrooms w/Muenster Cheese

4 whole chicken breasts, boned and  skinned
3 eggs
1/2 cup of Italian flavored bread crumbs
6 tablespoons of butter
10 3/4 ounces of chicken broth
2 teaspoons of lemon juice
6 ounces of sliced Muenster cheese
8 ounces of fresh mushrooms  

Cut chicken breasts into bite size pieces. Soak several hours or overnight in 3 beaten eggs. Preheat  oven to 350ºF. Roll chicken pieces in bread crumbs, sauté with sliced mushrooms in margarine for 10 to 15 minutes. Place in casserole. Pour chicken broth over chicken and mushrooms. Sprinkle with lemon juice. Cover with sliced Muenster cheese. Bake uncovered for 30 to 40 minutes.
