| Basic Skillet Fried Chicken
1 fryer, cut up salt 1/2 cup of buttermilk flour shortening |

Sprinkle chicken with salt. Dip pieces of chicken in buttermilk; roll in flour. Drop chicken into 1 inch of hot shortening in cast iron skillet. Cover and reduce heat. When browned, turn and cook until tender and well browned. Serves 6-8. |
