Chicken >

Brunswick Stew #2

one 3 to 4 pound chicken, cut into serving pieces
Boiling water
1 teaspoon of salt
3 potatoes, peeled and sliced
1 large onion, sliced
1 cup of green lima beans
1 cup of canned tomatoes or 5 fresh tomatoes, sliced
1 tablespoon of sugar
1 cup of frozen corn
freshly ground black pepper to taste
1 tablespoon of ketchup or Worcestershire sauce, optional
1/4 cup of butter



Place chicken in Dutch oven with enough boiling water to cover. Add salt and simmer for 45 minutes. Add potatoes, onion, lima beans, tomatoes, and sugar to chicken. Cover and simmer for 30 minutes or until beans and potatoes are tender.
Add corn, cover and simmer for 10 minutes. Season and add ketchup or Worcestershire sauce, if desired. Add butter and stir well. Transfer to serving dish and serve hot. Serves 4 to 6
