Preheat your oven to 475ºF. Slice the celery. Sprinkle the inside cavity of chicken with thyme and salt, add 1 teaspoon of butter, sliced celery and onion. Rub outside of chicken with the remaining butter. Tuck the wing tips under the back of chicken. Place the chicken breast side down on rack in roasting pan. Add enough water to cover bottom of pan. Roast for 10 minutes. Reduce the temperature to 375ºF. Roast for 20 minutes longer. Turn the chicken breast side up. Roast until the chicken is browned, about 30 minutes longer.
