Chicken Cacciatore Basic-Recipes.com 9/1/06

5 tablespoons of olive oil
2 1/2 - 3 pound chicken, cut into serving pieces
1 cup of green pepper, chopped
1 cu of white wine
2 medium onions, chopped
2 cups of tomatoes, peeled and seeded
1 clove garlic
seasoned flour

 

Brown the onion in 2 tablespoons of oil until slightly browned. Dredge the chicken with seasoned flour. Sauté until well browned on all sides in remaining oil. Add tomatoes, pepper, garlic and onion. Simmer for 15 minutes, covered. Add white wine. Season with salt and pepper. Simmer covered for about 30 minutes longer or until the chicken is tender.
