Place the chicken, water, salt and pepper in a deep saucepan. Cover and simmer for 30 minutes. Add the vegetables and continue simmering for 20 minutes or until the chicken and vegetables are fork tender. Remove the chicken and vegetables from broth, set aside and keep warm. Add enough water to broth to measure 2 quarts, bring to a boil. Drop dumplings into boiling broth. Cook, uncovered, over medium high heat as liquid continues to boil, stir often, until dumplings sink, about 5 minutes. Add dumplings to chicken and vegetable mixture. Dumplings 2 cups of all purpose flour 1/2 teaspoon of salt 2 teaspoons of shortening 3/4 cup of hot water Sift together the flour and salt in a large bowl. Cut in shortening, stir in hot water until soft dough forms. Roll out dough on a lightly floured surface to 1/16 inch thickness. Cut dough into 1 x 1 1/2 inch rectangles, sprinkle lightly with flour. Serves 4
