Pecan Crusted Chicken with Apple Cider Sauce

6 Boned and skinned chicken breasts
1 cup of flour
2 Eggs
1 cup of milk
1 cup of finely chopped pecans
1/4 cup of bread crumbs
APPLE CIDER SAUCE
1 tablespoon of Olive oil
3 Shallots
1 tablespoon of minced garlic
1 quart of cider
2 cups of Demi glace
1/2 cup of heavy cream
Salt and pepper; to taste
 

Combine pecans and breadcrumbs. Mix eggs and milk. Place chicken in flour, then milk and eggs and finish in pecans. Heat a skillet with oil and pan fry until brown. Bake in 350ºF. oven until done <about 30 minutes> Place oil in sauce pan and heat. Saute shallots and garlic. Add cider and simmer until reduced by half. Add remaining ingredients and simmer until thick. Serving Size: 6

NOTES : Knorrs Demi-Glace in a dry package mix can be used for this amazing sauce.
