| Oven Fried Paprika Chicken 1/4 cup of butter or margarine 1/2 cup of all purpose flour one 2 - 2 1/2 pound broiler fryer, cut up 2 eggs 1 1/2 teaspoon of salt 1/2 teaspoon of onion salt 2 tablespoons of fresh, frozen or canned lemon juice 1 cup of packaged dried bread crumbs
Preheat oven to 350ºF. In a 13 x 9 x 2 inch baking dish, melt the butter. Meanwhile, place the flour in a bag, shake the chicken pieces, one at a time, until coated, set aside. In a bowl, using a fork, beat the eggs with salt, paprika, onion salt, and lemon juice until well blended. Dip the floured chicken pieces, one at a time in egg mixture, then in crumbs, turning to coat evenly, then in melted butter in baking dish arrange the chicken skin side down. Bake about 45 minutes or until fork tender, turning once. Serve with dilled zucchini in cream or another green vegetable. |
