| Chicken & Yellow Rice
4 chicken breasts 1 small onion, chopped 1 button garlic, minced 1 6-ounce can of tomatoes 1 quart of water 1 bay leaf 1 teaspoon of salt 1 cup of uncooked rice pinch of saffron 1 small green pepper, chopped 1 pimento, chopped 1 small can of peas |

Brown chicken breasts well in oil. Sauté onion and garlic in small amount of oil. Add tomatoes and water; boil for 5 minutes. Add all remaining ingredients except peas, stirring well. Bake at 350ºF. for 20 minutes. Top with chicken breasts; bake for 10 minutes longer. Serve garnished with green peas. Serves 4. |
