| | Chicken in Cider & Mustard
1 tablespoon of butter one 3 pound chicken, cut into serving pieces 1 large onion, thinly sliced 1/2 teaspoon of salt 1/2 teaspoon of pepper 2/3 cup of apple cider 1 tablespoon of Dijon mustard 2 sprigs of fresh thyme or 1/2 teaspoon of dried thyme 2/3 cup of light cream
Melt butter in deep skillet. Add chicken and brown on all sides. Add onion, salt, pepper, and cider. Mix mustard, thyme, and cream together, stir mixture into chicken. Simmer chicken for 30 to 35 minutes. Serve with boiled potatoes and carrots. Serves 4 |
