| Chicken Pie
3/4 cup of butter 3/4 cup of flour 1 teaspoon of salt 1/8 teaspoon of pepper 2 cups of chicken stock 2 cups of light cream 1 tablespoon of lemon juice 4 cups of diced, cooked chickenMelt butter; add flour, salt, and pepper. Cook, stirring constantly until mixture is smooth. Add stock and cream; cook, stirring, until thick and smooth. Remove from heat; add lemon juice and chicken. Place in oblong baking pan; pour batter topping over creamed chicken. Bake at 425ºF. for 12- 15 minutes. Serves 6 -8
Batter Topping: 1 1/4 cup of flour 1/2 teaspoon of salt 2 teaspoons of baking powder 4 eggs, separated 1 cup of milk 2 tablespoons of melted butter
Stir together dry ingredients. Beat egg yolks until light; add milk and butter. Mix lightly with dry ingredients. Beat egg whites and fold into batter. |
