Preheat oven to 400ºF. Line a greased 9 inch pie plate with mashed potatoes. Melt butter in saucepan. Stir in flour and pepper. Add broth gradually, whisking until boiling. Add cream or half and half and mushrooms, whisking constantly, simmer for 3 - 4 minutes. Put chicken into prepared pie plate. Pour sauce over chicken and sprinkle with Parmesan cheese. Bake 25 - 30 minutes. Serves 4 |
