2 1/2 - 3 pound of chicken pieces shortening 1 medium onion 1 large bell pepper, diced 1 or more cloves of garlic 2 cups of tomatoes 1 teaspoon of salt 1 teaspoon of sugar 1 teaspoon of white pepper 1 teaspoon of powdered thyme 1 teaspoon of chopped parsley 1 teaspoon of curry powder 1/4 pound of almonds, blanched and browned 1/4 cup of currants
Sauté the chicken in hot fat until brown on all sides. Remove chicken, place in covered baking dish. Pour off all but 1 tablespoon of fat. In this , sauté the onion, bell peppers and garlic until brown. Add the tomatoes and cook for 10 more minutes. Add spices and cook for 5 minutes more. Pour sauce over chicken. Add more fat if needed. Bake at 325ºF. for 45 minutes. Mix the almonds and currants among pieces of chicken and serve on a platter surrounded by rice. |
