| | Leftover Chicken & Taco Chips Casserole
9 taco shells or one 12 ounce bag of taco chips 2 while cooked chicken breast, chopped one 10 1/2 ounce can of condensed chicken and rice soup 2 cups of grated sharp Cheddar cheese one 10 ounce can of tomatoes and green chilies
Preheat oven to 350ºF. Crush taco shells or chips in bowl. Place layer of crushed tacos in bottom of greased 1 quart casserole. Sprinkle layer of chopped chicken on top. Pour several spoonfuls soup over chicken layer. Sprinkle with layer of cheese. Add several spoonfuls of tomato and green chili mixture over cheese layer. Repeat layers until all ingredients have been used. Top with grated cheese. Bake for 25 minutes, until hot. Remove from oven, and serve. This freezes well before and after baking. Serves 4 to 6 |
