| | Lemon Ginger Chicken Salad
1/2 cup of mayonnaise 1 tablespoon of sugar 1/4 teaspoon of salt 1 tablespoon of lemon juice 1/4 cup of sour cream 1/2 teaspoon of grated lemon rind 1/2 teaspoon of ground ginger or fresh grated ginger root
2 cups of cooked cubed chicken 1 cup of seedless green grapes 1 cup of sliced celery toasted slivered almonds, optional
Stir together the first seven ingredients. Add chicken, grapes and celery, toss to coat well. Cover and chill at least 2 hours. Serve on lettuce leaf or in chilled cantaloupe halves. Sprinkle with toasted almonds. Serves 4 |
